How do you count double paradiddle?

this is my guess, im not sure though thats why im asking:

R L R L R R L R L R L L R L R L
1 e + a 2 e + a 3 e + a 4 e + a .....and so on

might be a little hard to read, sorry

oh, and is it the same for triple paradiddles?

That is correct if you're playing them as sixteenth notes. They could be played as quarter or eighth notes as well.
In the lesson, they are using eighth triplettes and they'd be counted like any other triplette:
R L R L R R L R L R L L
1 T L 2 T L 3 T L 4 T L
