Hey, i'm a little confused with this one. I'm looking at the sheet music provided and it has three eighth notes and then a quarter note. But when they are showing how to play it, it looks like just four straight eighth notes, 1 and 2 and. Am I reading the sheet music wrong? Does the quarter note get counted on the and? Any help would be appreciated, I could play it by ear, but i'd rather have the notation and counting behind me as well.

If you're talking about the three eighth notes tied together with a small '3' above them, they are triplets. Three eighth note triplets are played over the same duration as two eighth notes, or one quarter note. In other words, they are played 50% faster. Is that what you are looking at? If so, a good example for simple counting is exercise #2.
It would be counted: 1 - 2 - 3 trip let - 4, where "3 trip let" takes the same time to play as a single quarter note.
